Tomorrow is the first day of December.....officially my favorite month of the year. I love a season that brings together family, food, and faith, and there is no better time to share some of my favorite dishes with you all.

This week, I am giving you a couple of delicious ideas on what to do with that leftover Thanksgiving food. My Turkey Enchilada is a family favorite around here, and you will even want to make it when it isn't leftover season.

I have also included one of my go-to comforting and hearty dishes that my family craves as it gets colder outside. You might even want to consider it for a festive twist on your Christmas dinner theme.

Easy Lasagna with Cottage Cheese

This is the comforting and hearty dish my family loves!

You know, making lasagna does not have to be complicated to be delicious. I promise that if you try this one, you will not be disappointed.


So simple yet so delicious! Chop up some fresh romaine, add crunch croutons, and toss with this creamy Caesar dressing. Finish with a generous sprinkle of grated Parmesan cheese for the perfect side dish to your lasagna dinner.


Ever asked: What to do with leftover turkey?

Well, here are a couple of ideas that turned out delicious.

Leftover turkey has never tasted this good. They are warm, cheesy, and packed with flavor. Everyone wins with this dish!!

🎄 Some Tips for Getting into the Christmas Mood!

  • 🎵Make a Christmas playlist filled with your holiday favorites! Let music set the tone as you ease into the season.
  • ☕️Spread kindness on purpose. It could be as simple as texting someone an encouraging word or paying for the person behind you! Be creative!
  • 🎄Decorate something - anything! If it seems overwhelming or "not worth it", start small with picking a cozy corner or shelf!
  • Christmas baking always brings joy in our home- Below is my recipe for Monster Cookies (a family favorite) and Christmas Praline Cookies
